It makes a little more than 2 cups.
• 2 cups small-curd cottage cheese
• 6 Tbs. sour cream
• 3 cloves garlic, minced or mashed to a pulp; 2½ Tbs. minced fresh parsley
• minced chives (optional)
• fresh-ground pepper to taste
• salt to taste
1. Press the cottage cheese through a sieve and stir in the sour cream, garlic, and parsley. If you have fresh chives, a spoonful of minced chives could be added to the mixture. Stir the mixture well. Grind in some pepper, add salt, stir again, and put away in a covered container to chill for several hours in the refrigerator.
2. Serve the cheese with black bread and warn all people who are afraid of garlic.
