    Banana-Oat Bran Waffles

    Never toss borderline too-ripe bananas; instead just put them in the freezer so you can pop them out, defrost them, and use them to create something delicious like these nutty breakfast waffles.

    Serves 4

    Ingredients

    • 2 large eggs
    • 1 cup buttermilk
    • 2 very ripe bananas
    • 4 tablespoons melted butter plus extra for serving
    • 1 cup all-purpose flour
    • 1⁄2 cup oat bran
    • 2 teaspoons baking powder
    • 1⁄2 teaspoon salt
    • 1⁄2 cup crushed pecans
    • Maple syrup or other fruit syrup for serving

    1. Preheat the waffle iron. Spray both surfaces with nonstick cooking spray.

    2. Beat together the eggs, buttermilk, bananas, and butter until well blended and smooth. Fold in the flour, oat bran, baking powder, and salt, stirring until just combined and moistened; the batter should be stiff, not runny. Fold in the pecans.
