Ingredients

• 1 green bell pepper
• 1 medium sweet onion, such as red or Vidalia
• 1½–2 cups / 350-475g diced tomatoes, fresh or canned with juice
• 1 clove garlic, minced
• ½ tsp / 1g ground ginger, or 1 tsp / 3g freshly grated ginger
• 2 tbsp / 8g fresh cilantro or parsley, finely chopped
• ½ tsp / 3g salt, or to taste
• Freshly ground black pepper, to taste
• Dash of cayenne pepper or hot sauce, to taste
• Cooked rice, for serving

Instructions

2. Finely dice the green bell pepper and sweet onion and place them in a medium mixing bowl.
3. Add the diced fresh or canned tomatoes (with their juice) to the bowl.
4. Stir in the minced garlic, ginger, fresh cilantro or parsley, salt, and pepper. Add a dash of cayenne or hot sauce to your preferred level of heat.
5. Mix all thoroughly. For the best flavor, let the rougaille sit for at least 10 minutes for the flavors to meld.
6. Serve the fresh rougaille at room temperature or chilled, spooned generously over bowls of warm cooked rice.
