Brandy-drenched and not overly sweet, this is marvelous tasting and very refreshing.
• 4 medium-sized peaches
• 3 medium-sized bananas
• juice of ½ large lemon
• ½ cup brandy
• ⅛ tsp. cinnamon
• 1 cup heavy cream
• ⅓ cup confectioners’ sugar
• ⅓ cup slivered blanched almonds
• 1 to 2 tsp. powdered sweet chocolate
1. Peel the peaches as thinly as possible and slice them in thin wedges. Peel and slice the bananas. Toss the fruit gently in a bowl with the lemon juice, then add the brandy and the cinnamon. Toss again until evenly coated, then refrigerate for ½ to ¾ hours.
2. Whip the cream with the confectioners’ sugar until it holds fairly stiff peaks.
3. Put the fruit and brandy mixture in an attractive, shallow serving bowl and sprinkle it with the slivered almonds. Spoon the whipped cream over the fruit in swirls and peaks. Through a fine sieve, sprinkle on the powdered chocolate. Serve immediately.
