Serves 6 to 8
2 to 2½ lbs. small, perfect peaches (10 to 12)
4½ cups red wine
¾ cup sugar
1 stick cinnamon, 2 inches long
Wash the peaches, handling them gently to avoid bruising. In a fairly large enameled saucepan, simmer the wine with the sugar and cinnamon until all the sugar is dissolved. Add the peaches and simmer them very gently for 8 minutes. Remove the saucepan from the heat and leave the peaches in the hot wine for about ½ hour.
Spoon out the peaches, allow them to cool slightly, then carefully slip off their skins. Arrange them in an attractive serving dish, pour the wine over them, and chill for at least 1 hour.
