    Brandy cream

    Serves 6

    One of the simplest of all desserts to make, and sensationally rich and flavorful.

    • 1 cup heavy cream, well chilled
    • ⅓ cup confectioners’ sugar
    • ⅓ cup honey
    • ⅓ cup brandy
    • optional garnish
    • chocolate curls or sliced, glacéed cherries

    1. Whip the chilled cream with the confectioners’ sugar in a large, deep mixing bowl until it just begins to hold firm peaks. Stir the honey and brandy together until they are well blended. Pour the liquid into the whipped cream and continue beating it until it is perfectly smooth and thick. It won’t get stiff enough to hold peaks, but it will thicken considerably.
    2. Spoon the cream into 6 dessert or shallow wine glasses. If you like, you can decorate each serving with a few chocolate curls or with some sliced, glacéed cherries. Chill the dessert for 2 hours before serving.
