    Potato kugel

    A kugel is a puddinglike dish, best eaten hot or warm. Potato Kugel is generally a side dish, but it could be used as the basis of a light meal, with the addition of a soup or salad and some fruit.

    Serves 6 to 8

    • 4 medium-sized potatoes (about 2 lbs.)
    • 1 large yellow onion
    • 2 eggs
    • 1 tsp. salt
    • pepper to taste
    • 3 Tbs. vegetable oil
    • garnish
    • sour cream

    1. Peel the potatoes and grate them as quickly as possible. Peel and grate the onion, beat the eggs lightly, and stir together the potatoes, onions, eggs, salt, and pepper. If you are using a blender or food processor, cut the peeled potatoes and onions into chunks and process them, ½ batch at a time, together with the eggs, until no large pieces are left.
    2. Preheat the oven to 350 degrees, pour the oil into a shallow, medium-sized casserole, and heat it for a few minutes. Pour the kugel mixture into the hot oil in the casserole and bake it for 1 hour. The kugel should be puffed up and browned. Serve hot with sour cream.
