    Spicy mousseline sauce

    It makes about 1¼ cups

    Serve the sauce warm with vegetables or eggs. It is great with Wild Mushroom and Dill souffle.

    • 1 recipe hot Hollandaise Sauce
    • ½ cup heavy cream
    • ¼ to ½ tsp. hot paprika, or ½ tsp. sweet paprika plus ¼ tsp. cayenne pepper, to taste

    1. Make the Hollandaise Sauce according to instructions. When it is finished, but before it has time to cool, beat the cream in a bowl until it holds firm peaks. Stir it into the warm hollandaise until they are completely blended.
    2. Add the hot paprika or the sweet paprika and the cayenne, stir it in, and taste. Add more paprika or cayenne, to taste.
