    Four-grain muffins

    Makes 12 muffins

    • ¾ cup whole wheat flour
    • ¾ cup yellow corn meal
    • ½ cup dark rye flour
    • 2 tsp. baking powder
    • ½ tsp. salt
    • ½ cup rolled oats
    • 1½ cups milk
    • 1 egg
    • ¼ cup vegetable oil
    • ¼ cup honey

    1. Sift together the wheat flour, corn meal, rye flour, baking powder, and salt. Stir in the rolled oats.
    2. In another bowl, beat together the milk, egg, oil, and honey. Stir the two mixtures together vigorously just until they are well combined. Then spoon the batter into buttered muffin tins.
    3. Bake the muffins in a preheated oven at 400 degrees for 20 minutes. Serve warm.
