    Orange-date bread

    It makes one large loaf or 2 small ones.

    • 1½ cups whole wheat flour
    • 1 cup white flour
    • ½ tsp. salt
    • 2 tsp. baking powder
    • 4 Tbs. soft butter
    • ¾ cup sugar
    • 1 egg
    • 1 cup fresh orange juice
    • 2 Tbs. fresh-grated orange rind
    • ½ cup chopped dates
    • ½ cup rolled oats

    1. Sift together the whole wheat flour, white flour, salt, and baking powder. Cream together the butter and sugar, then beat in the egg. Alternately add the flour mixture and the orange juice, beating after each addition, until you’ve used all but 2 tablespoons of the flour (use all of the juice). Add the grated orange rind.
    2. Sprinkle the chopped dates with the reserved flour and roll them around in it, separating the bits from each other until they are no longer sticking together in clumps. Add the coated dates and the oats to the batter and stir well.
    3. Spoon the batter into 1 large buttered loaf pan or 2 small ones, and bake in a preheated oven at 350 degrees for 1 hour, or until a toothpick inserted near the center of a loaf comes out clean. Serve warm or cool with cream cheese.
