    Pita, Cheese, and Veggie Grill

    PREP: 20 minutes GRILL: 11 minutes MAKES 4 servings

    1 8-ounce block feta cheese, quartered

    1 medium zucchini, halved lengthwise

    1 medium red onion, cut into 1⁄2 -inch slices

    1⁄4 cup bottled Italian salad dressing

    Salt

    Ground black pepper

    1 tablespoon honey

    4 pita bread rounds

    2 medium tomatoes, cut into wedges

    1 Drizzle feta cheese, zucchini, and onion slices with 2 tablespoons of the salad dressing. Sprinkle with salt and pepper.

    2 For a charcoal grill, grill zucchini and onion on the rack of an uncovered grill directly over medium coals about 8 minutes or until vegetables are tender, turning once halfway through grilling. At the same time place a 6-inch cast-iron skillet on rack to preheat for softening the cheese. Remove vegetables. Grill pita bread and tomatoes on grill rack about 2 minutes or until bread is toasted and tomatoes are lightly charred. Place feta cheese in hot skillet; grill for 1 to 2 minutes or until softened. Remove skillet from grill. (For a gas grill, preheat grill. Reduce heat to medium. Place zucchini, onion, and skillet on grill rack over heat. Cover and grill as above.)

    3 To serve, cut zucchini into chunks. Drizzle the remaining 2 tablespoons salad dressing and honey over the softened cheese, vegetables, pita bread rounds, and tomatoes.
