Veggie-Spinach Burgers

PREP: 10 minutes GRILL: 15 minutes MAKES 4 burgers

2 medium red onions, cut into 1⁄2 -inch slices

4 refrigerated or frozen meatless burger patties

1⁄4 cup bottled vinaigrette salad dressing

4 cups fresh spinach leaves

1 clove garlic, minced

1 tablespoon olive oil

1⁄2 cup crumbled feta cheese

4 hamburger buns, split and toasted

3 To serve, place onion slices on bottoms of buns. Top with grilled burger patties, spinach mixture, and bun tops.

For a simple, oh-so-good dessert, fire up some fruit. Try pineapple, nectarines, peaches, and/or bananas on the grill and drizzle with a little honey.
