2 slices whole wheat bread, torn
1⁄4 cup salted macadamia nuts or cashews
1⁄4 cup loosely packed fresh cilantro leaves
2 cloves garlic
1 15-ounce can black beans, rinsed and drained
1 tablespoon hoisin sauce
1⁄4 teaspoon salt
1⁄4 teaspoon ground black pepper
1 egg white, lightly beaten
1 tablespoon olive oil
1 8-ounce can pineapple slices, drained
4 hamburger buns
1 recipe Lime Mayonnaise
1 For patties, place torn bread in a food processor. Cover and process until bread resembles coarse crumbs; transfer to a large bowl and set aside. Place macadamia nuts, cilantro, and garlic in food processor. Cover and process until finely chopped. Add drained beans, hoisin sauce, salt, and pepper; process with several on/off turns until beans are coarsely chopped and mixture begins to pull away from sides. Add bean mixture and egg white to bread crumbs in bowl; mix well.
2 Shape mixture into four 1⁄2 -inch-thick patties. Brush both sides of patties with olive oil; place patties on a tray. Cover and chill in the refrigerator for at least 1 hour before grilling.
3 For a charcoal grill, grill patties and pineapple slices on the lightly greased rack of an uncovered grill directly over medium coals for 8 to 10 minutes or until patties are heated through (160°F) and pineapple slices are grill-marked and light brown, turning once halfway through grilling. Remove patties and pineapple slices from the grill. Lightly toast cut sides of buns for 1 to 2 minutes on grill. (For a gas grill, preheat grill. Reduce heat to medium. Place patties and pineapple slices on grill rack over heat. Cover; grill as above. Remove patties and pineapple slices from the grill and add buns; cover and grill as above.)
4 Serve bean burgers topped with Lime Mayonnaise and pineapple slices on grilled buns.

Lime Mayonnaise
In a small bowl combine 1⁄4 cup mayonnaise, 1⁄2 teaspoon finely shredded lime peel, 1 teaspoon lime juice, and 1 teaspoon snipped fresh cilantro.

Root vegetables such as potatoes take a long time to fully cook on the grill. Speed up the process by boiling these vegetables for a few minutes first to partially cook them.
