    Apple-Brie Sandwiches

    START TO FINISH: 20 minutes MAKES 4 sandwiches

    8 slices firm-texture white bread, toasted

    1⁄3 cup apricot preserves

    4 to 5 ounces Brie cheese, sliced

    1 medium Braeburn, Gala, or Pink Lady apple, cored and sliced

    3⁄4 cup watercress or fresh baby spinach

    1⁄4 cup very thinly sliced red onion

    1 Spread 1 side of bread slices with preserves. Layer 4 of the bread slices with cheese, apple, watercress, and red onion. Top with the remaining 4 bread slices, spread sides down.
