    Summer Tomato Stack

    START TO FINISH: 10 minutes MAKES 4 sandwiches

    2 whole wheat English muffins, toasted

    4 thin slices tomato

    4 ounces fresh mozzarella cheese, cut into 8 slices

    1 tablespoon snipped fresh basil

    4 teaspoons olive oil

    1⁄2 teaspoon salt

    1⁄2 teaspoon cracked black pepper

    4 grape or cherry tomatoes, halved (optional)

    1 On each English muffin half, layer a tomato slice, a cheese slice, and 1⁄2 teaspoon of the basil. Repeat layers. Drizzle with oil; sprinkle with salt and pepper. If desired, top with tomato halves.
