    Camembert Pizzas with Focaccia Crusts

    START TO FINISH: 20 minutes MAKES 4 servings

    4 6-inch individual Italian flatbreads (focaccia)

    2 large tomatoes, sliced

    Salt

    Ground black pepper

    1 8-ounce round Camembert cheese, chilled

    1⁄3 cup chopped walnuts

    2 tablespoons snipped fresh chives

    1 Preheat broiler. Place flatbreads on the unheated rack of a broiler pan. Top with tomato slices; sprinkle with salt and pepper. Cut cheese into thin slices. Place cheese slices on top of tomato slices.

    2 Broil 4 to 5 inches from the heat about 2 minutes or until cheese starts to melt. Sprinkle with walnuts. Broil for 1 minute more. Sprinkle with chives.

    Camembert is a soft, buttery French cheese similar to Brie. You can find it in gourmet food stores or delis as well as supermarkets that have a large cheese selection. When served at room temperature, it makes a delicious spread to serve with crackers and fruit.
