    Spinach and Feta Casserole

    PREP: 15 minutes BAKE: 45 minutes OVEN: 350°F MAKES 4 servings

    3 eggs, lightly beaten

    2 cups cream-style cottage cheese

    1 10-ounce package frozen chopped spinach, thawed and well drained

    1⁄3 cup crumbled feta cheese

    1⁄4 cup butter, melted

    3 tablespoons all-purpose flour

    2 teaspoons dried minced onion

    Dash ground nutmeg

    1 Preheat oven to 350°F. Grease a 11⁄2 -quart casserole; set aside.

    2 In a large bowl combine eggs, cottage cheese, spinach, feta cheese, melted butter, flour, dried onion, and nutmeg. Transfer mixture to the prepared casserole.

    3 Bake, uncovered, about 45 minutes or until center is nearly set (160°F).
