4 8-inch whole wheat flour tortillas
Olive oil nonstick cooking spray
11⁄2 cups fat-free spicy refried beans, warmed
11⁄2 cups shredded leaf lettuce
3⁄4 cup fresh deli salsa, drained
1⁄2 cup shredded reduced-fat Mexican cheese blend (2 ounces)
1 Preheat oven to 425°F. Lightly coat both sides of tortillas with cooking spray. Place tortillas on an ungreased extra-large baking sheet. Bake for 10 to 12 minutes or until lightly browned and crisp, turning once. Cool tortillas on a wire rack.
2 Spread tortillas with warm refried beans. Top with lettuce, salsa, and cheese.
