8 7- or 8-inch flour tortillas
1 cup chopped onion (1 large)
1 tablespoon vegetable oil
1 16-ounce can refried beans
1 cup shredded cheddar cheese (4 ounces)
1 cup shredded lettuce
1⁄3 cup salsa
Sour cream and/or guacamole (optional)
1 Preheat oven to 350°F. Stack tortillas and wrap tightly in foil. Bake about 10 minutes or until softened.
2 Meanwhile, for filling, in a large skillet cook onion in hot oil over medium heat until tender, stirring occasionally. Add refried beans; cook and stir until heated through.
3 Spread about 1⁄4 cup of the filling over the bottom half of each tortilla; sprinkle each with 2 tablespoons cheese. Fold up bottom edge of tortilla. Fold in opposite sides; roll up from the bottom. Place tortilla rolls in an ungreased 3-quart rectangular baking dish.
4 Bake about 10 minutes or until heated through. Serve with lettuce and salsa. If desired, top with sour cream and/or guacamole.
