Grilled Peanut Butter, Banana, and Berry Sandwiches
START TO FINISH: 20 minutes MAKES 4 sandwiches
1⁄4 cup peanut butter
8 slices whole grain cinnamon-raisin bread
1 medium banana, cut into 16 slices
4 fresh strawberries, each cut into 4 slices (16 slices total)
4 teaspoons grated bittersweet or semisweet chocolate
1 tablespoon butter
1 Spread peanut butter evenly onto 1 side of each bread slice. Divide banana slices and strawberry slices among 4 of the bread slices; sprinkle with grated chocolate. Top with the remaining 4 bread slices, peanut butter sides down.
2 In an extra-large skillet* or large griddle heat butter over medium heat. Add sandwiches; cook about 4 minutes or until crisp and golden brown, turning once halfway through cooking.
