    PEACHES + CREAM LASSI

    A subtle creamy beauty.

    Makes 4 glasses

    1 pound peaches
    ½ cup coconut milk
    2 cups plain Greek yogurt
    3 tablespoons sugar or honey
    a pinch of ground cinnamon
    1 teaspoon rose water (or to taste)

    Wash the peaches and chop into small chunks, discarding the pit in the center. Put into a blender, along with the coconut milk, yogurt, sugar or honey, and cinnamon. Go easy on the rose water, as all brands vary; add it little by little until it tastes just right to you and isn’t overpowering.
