Almond milk, or “badam doodh,” is incredibly popular the whole of India over. It’s a particular favorite of mothers to give their children as a soothing bedtime drink, and for many millions of us it spells nostalgia and comfort.
Traditionally it’s sweetened with sugar, but I prefer to use frozen Medjool dates as they help to thicken the milk slightly and add a lovely malted flavor not dissimilar to chocolate or Horlicks. If you haven’t got time to freeze the dates beforehand, add more ice to thicken.
Makes 2 glasses
½ cup frozen Medjool dates
1½ cups almond milk
4–6 ice cubes
Remove any pits from the dates, then whizz everything up in a blender and divide between two glasses.
