    Waldorf-inspired coleslaw

    serves 4 to 6

    Crisp apples and crunchy walnuts are just two of the taste treats in this luscious slaw inspired by the classic Waldorf salad.
    1 cup raw cashews

    ½ cup apple juice

    2 tablespoons freshly squeezed lemon juice

    ½ teaspoon sugar

    ¼ teaspoon salt

    2 apples, halved and cored

    1 (8-ounce) package shredded cabbage

    (for coleslaw)

    ½ cup walnut pieces

    ¼ cup golden raisins or sweetened

    dried cranberries

    2 scallions, finely minced

    In a blender or food processor, grind the cashews to a fine powder. Add the apple juice and process until smooth. Add the lemon juice, sugar, and salt, and process until well blended. Transfer the dressing to a large bowl.
    Thinly slice the apples and add to the dressing. Toss gently to coat the apples with the dressing. Add the shredded cabbage to the bowl, along with the walnuts, raisins, and scallions. Stir to combine well. Taste and adjust the seasonings.
