    Guacamole roll-ups

    serves 4

    This tasty appetizer contains the luscious flavors of avocado, lime, and your favorite salsa, all rolled up in a soft flour tortilla, with a few shreds of lettuce for crunch. They’re also great for lunch—I especially like making them with whole wheat tortillas.
    2 ripe Hass avocados

    ½ cup tomato salsa

    Juice of 1 lime

    Salt and freshly ground black pepper

    4 large flour tortillas, warmed

    1 cup finely shredded romaine lettuce

    Halve and pit the avocados. Scoop out the flesh with a spoon and place it in a bowl. Add the salsa and lime juice and mash together to blend. Season with salt and pepper to taste.

    Place the tortillas on a flat work surface and spread about ¼ cup of the guacamole mixture across each tortilla. Sprinkle with the shredded romaine. Roll up the tortillas, cut into 1-inch slices, and stand on end. Serve at once.
