This is my favorite tomato sauce, very garlicky and flavorful. Dried herbs work fine here and add to its ease. Use it on Neapolitan Pizza, or simply serve on spaghetti or linguine for a quick meal.
MAKES ABOUT 3 CUPS
Вј cup olive oil
4 cloves garlic, minced
28-ounce can tomato purГ©e
2 tablespoons red wine
2 teaspoons dried oregano
1 teaspoon dried basil
ВЅ teaspoon dried thyme
ВЅ teaspoon salt
Liberal seasoning freshly ground pepper
- In a medium saucepan over medium-low heat, heat the olive oil and garlic. Cook for 3 minutes, or until the garlic is lightly golden. Stir often and be careful not to burn the garlic.
- Add all of the remaining ingredients and bring to a boil. Simmer the sauce for 20 minutes. Stir occasionally.
