Here is a simple, low-fat way to prepare broccoli, and although it has an Asian character I find that it goes well with most entres. You could also mix in sliced carrots for a colorful combination.
SERVES 4
1 large bunch broccoli
1 tablespoon sesame seeds
2 teaspoonsВ Asian sesame oilimage
1 tablespoon tamari or other soy sauce
- Cut the broccoli into bite-size florets. Peel the stalks and cut them into comparable-size pieces. Steam both the florets and the stalks in a vegetable steamer until crisp yet tender. The broccoli should retain its bright green color.
- Meanwhile toast the sesame seeds in a small saucepan or skillet over medium heat until they begin to smoke lightly and become fragrant. Shake the pan often and be careful not to burn them. Immediately remove from the heat and put in a small bowl.
- Drain the broccoli well. Return it to the pot (without the steamer) over the heat, then mix the sesame oil and soy sauce together and pour over the broccoli. Toss well. Add the sesame seeds and toss again. Serve immediately.
