Combining mashed and sliced banana in this memorable raita gives it an appealing silken texture.

SERVES 4 TO 6

2 large ripe bananas

ВЅ teaspoon ground coriander

Dash cayenne pepper

Вј teaspoon salt

1 cup plain yogurt

  1. Peel 1 of the bananas and put it into a medium bowl. Mash it thoroughly with a fork until it is a pure. Stir in the spices and salt; then stir in the yogurt until well blended.
  2. Peel the other banana and slice in half lengthwise. Slice each half into Вј-inch-thick slices and add to the yogurt mixture. Toss to blend.
  3. Spoon the raita into a serving dish and garnish with a sprinkling of cayenne pepper. Cover and chill at least 1 hour before serving.
