Hereвs another cucumber salad; this one goes particularly well with Asian meals. This is a very simple salad with a delicious, piquant sauce. You could improvise by substituting for one of the cucumbers a red bell pepper or some crisp snow peas, if you’d like.
1 tablespoon tamari or other soy sauce
1 tablespoon Chinese rice vinegar (or white vinegar)
1 tablespoon peanut oil
1 teaspoon sugar
2 teaspoonsВ Asian sesame oilimage
3 medium cucumbers
- Mix the dressing ingredients together in a medium bowl.
- Peel the cucumbers. Cut in half lengthwise and scoop out the seeds with a spoon. Discard the seeds. Slice the cucumbers ВЅ inch thick.
- Add to the dressing and toss very well. Serve immediately, or chill and let marinate for up to 2 hours. Don’t marinate any longer or the cucumbers will get soggy.
