Lem-Un-Cheesecake with Crumb Crust
Makes one 8- or 9-inch (20 to 23 cm) pie, enough for 8 servings
This is a delicious way to get protein. Once the cheesecake is chilled, decorate the top with fresh fruit such as blueberries or sliced strawberries, peaches, or kiwis, or serve with Blueberry Orange Sauce, or Apple Plum Chutney.
1 recipe Oats ‘N’ Flax Crumb Crust
2 packages (each 12.3 ounces/349 g) firm silken tofu
1/3 cup (85 mL) maple or agave syrup
4 teaspoons (20 mL) minced lemon peel
1/4 cup (60 mL) lemon juice
1 1/2 teaspoons (7 mL) vanilla extract
Prepare the crumb crust and set aside.
Preheat the oven to 350°F (180°C).
Put the tofu, maple syrup, lemon peel, lemon juice, and vanilla in the bowl of a food processor and purée until smooth, occasionally scraping down the sides of the bowl. Pour the mixture into the crumb crust and bake for 1 hour or until a toothpick comes out clean and the crust begins to set. Chill before serving.
