Cashew Cream Topping
Makes 1 1/4 cups (310 mL)
Use this thick, creamy topping on Apple Pear Crumble, Creamy Rice Pudding, or Pumpkin Spice Pie. Two tablespoons (30 mL) provides 4 grams of protein, as well as copper, iron, magnesium, manganese, and zinc.
1 cup (250 mL) cashews
1/4 cup (60 mL) pitted dates or maple syrup
Soak the cashews in a bowl of hot water for 2 hours, then drain, reserving the soaking water. Place the cashews, dates, and 1/2 cup (125 mL) of the soaking water in a blender and process until smooth. If you wish to have a thinner sauce, add a little more water. Stored in a glass jar with a lid and refrigerated, the cashew cream will keep for up to 1 week.
