    Summer Fruit Compote

    2 medium bananas

    1⁄3 cup granulated sugar

    1 cup water

    1 teaspoon peeled and grated fresh ginger

    1⁄4 cup lemon juice

    4 5-inch cinnamon sticks

    3 cups dried tropical fruit

    Peel and slice the bananas.
    Cook the sugar and water in a saucepan over low heat, stirring to dissolve the sugar. Add the ginger, lemon juice, and cinnamon sticks. Increase heat to medium and bring to a boil. Reduce heat to low and simmer for 5 minutes.
    Add the dried fruit and bananas. Return to a boil. Reduce heat to low, cover, and cook at a low simmer until the dried fruit is tender. Remove the cinnamon sticks.
    Let cool briefly and serve warm, or refrigerate overnight and serve cold.
