2 15-ounce cans quartered artichoke hearts, drained and rinsed
1 red pepper, chopped finely
1 green pepper, chopped finely
1 10-ounce package frozen spinach
3 cloves garlic, minced
1 cup plain Greek yogurt
8 ounces cream cheese
White pepper
1⁄4 cup Parmesan cheese
Preheat the oven to 325°F. Mix together all ingredients except Parmesan cheese. Spread into a 9″ × 9″ baking dish or 11⁄2-quart casserole dish, sprinkle Parmesan over the top, and bake 30 minutes until golden brown. Serve with whole-grain crackers and raw vegetables.
