    1 large (about 8 ounces) baking potato

    1 tablespoon Greek yogurt

    1⁄2 tablespoon butter

    1⁄4 teaspoon paprika

    1⁄8 teaspoon salt

    Pepper, to taste

    2 teaspoons shredded Cheddar cheese

    Wash the potato, scrubbing off any dirt. Pierce the potato in several spots with a fork.
    Place the potato on a paper plate or microwave-safe plate and microwave on high heat for 3–7 minutes, until cooked through. Let the potato sit for about 1 minute before removing from the microwave.
    Slice the potato open. Carefully scoop out most of the potato, leaving about 1⁄4 inch pulp around the skin. Mash the potato pulp with the yogurt, butter, paprika, salt, and pepper. Sprinkle the shredded cheese on top.
    Spoon the mixture into the potato shell and microwave for 3–5 minutes, until the cheese melts.

    Potato Cooking Times
    The time it takes to cook a potato in the microwave can vary quite a bit, depending on the size of the potato and the strength of your microwave. To be safe, cook the potato on high heat for 3 minutes, check it with a fork, and then continue cooking in 2-minute segments as required. The potato is cooked when it is tender and can easily be pierced with a fork. The skin may also be slightly wrinkled.
