Roasted-Garlic Mashed Potatoes

1 whole head garlic
2 tablespoons olive oil
6 potatoes, cooked
2 tablespoons vegan margarine
1⁄2 cup soy creamer
Sea salt and pepper to taste
Preheat oven to 400°F.
Remove outer layer of skin from garlic head. Drizzle generously with olive oil, wrap in aluminum foil, and place on a baking sheet. Roast in oven for 30 minutes. Gently press cloves out of the skins, and mash smooth with a fork.
Using a mixer or a potato masher, combine roasted garlic with potatoes, margarine, and creamer until smooth or desired consistency. Season generously with salt and pepper.
Vegan Mashed Potato Tricks
There’s nothing wrong with just switching the butter and milk for vegan versions in your favorite potato recipe, but half a container of nondairy sour cream or cream cheese, a few teaspoons of fresh crumbled sage, or some chopped artichoke hearts will make your spuds come alive. You can also simply add a shake of nutmeg or rosemary.
