    1 celery stalk

    11⁄2 cups chopped red apple

    1⁄2 cup walnut pieces

    1 tablespoon honey

    2 tablespoons vegan mayonnaise

    11⁄2 teaspoons lemon juice

    Wash the celery and cut diagonally into 1-inch slices. In a serving dish, mix the celery with the apple and the walnuts.
    Mix the honey into the mayonnaise to form a creamy dressing. Stir in the lemon juice.
    Toss the celery mixture with the dressing. Chill until ready to serve.
