    4 flour tortillas (10-inch diameter)

    2 tablespoons vegan mayonnaise

2 cups Succotash Salad (see Chapter 4)

1 large or 2 small beets (about 8 ounces), boiled until tender, peeled

1 ripe Florida avocado, peeled and cut into 1-inch wedges

    Kosher salt

Soften the tortillas by placing them directly into the microwave on a plate for 10–20 seconds.
Spread 1⁄2 tablespoon mayonnaise into a line across the center of each tortilla. Spoon 1⁄2 cup succotash onto each tortilla. Halve the beets, and cut the halves into 1⁄2-inch slices. Divide the beets and avocado slices evenly onto the tortillas, placing them on the side of the succotash line closest to you. Sprinkle with salt.
Place 1 of the tortillas on a work surface directly in front of yourself. Fold the near edge of the tortilla over the fillings, and roll it, jellyroll fashion, away from yourself, keeping even pressure to ensure a tight roll. Place seam-side down on a plate; repeat with remaining tortillas.

    Fiber Intake
Fiber is the most important part of each meal because it helps regulate blood sugars, energy levels, fullness, weight, and heart health, and it promotes a healthy digestive system. It is recommended to consume 25–38 grams of fiber per day. Sources should stem from vegetables, fruit, and whole grains.
