Ingredients

  • 1 lb (450 g) dry pressed tofu (or extra-firm, pressed well)
  • 2 medium -large carrots, peeled and grated
  • 2 large celery stalks, trimmed and grated
  • 2 tbsp (30 ml) soy sauce
  • 2 tsp (10 ml) chile paste
  • 1/4 cup (60 ml) dark sesame oil
  • If you can't find pressed tofu, wrap a block of extra-firm tofu in paper towels, place a heavy object on top, and press for at least 30 minutes to remove excess water.
  • For extra crunch and flavor, stir in 1/4 cup (960 ml) of toasted sesame seeds or chopped peanuts just before serving.

Method

  1. Prepare the Vegetables and Tofu: Cut the pressed tofu into 2-inch long matchsticks.
  2. Using a box grater or food processor, grate the peeled carrots and trimmed celery stalks.
  3. Make the Dressing: In a small bowl, whisk together the soy sauce, chile paste, and dark sesame oil until well combined.
  4. Combine and Marinate: In a large bowl, combine the tofu matchsticks, grated carrots, and grated celery.
  5. Pour the dressing over the top and toss gently to coat everything evenly.
  6. Chill: Cover the bowl and refrigerate for at least 2 hours, or up to overnight, to allow the tofu to absorb the flavors of the marinade.
  7. Serve: Just before serving, give the salad one final toss to redistribute the dressing.
  8. Enjoy chilled.
  9. Turn this salad into a complete meal by serving it over cold soba noodles or a bed of fresh spinach.
