Ingredients

  • 6 large navel oranges
  • ¾ cup (150 g) (5.3 oz) granulated sugar
  • 8 to 10 whole cloves
  • 1 cinnamon stick, about 1 inch / 2.5 cm long, broken into pieces
  • 1¼ cups / 300 ml (10.1 fl oz) dry white wine, such as Sauvignon Blanc or Pinot Grigio
  • 2 tbsp (30 ml) brandy
  • ½ cup (85 g) (3 oz) fresh pomegranate seeds, from 1 pomegranate
  • For a stunning visual twist, use a mix of citrus like blood oranges and Cara Cara oranges alongside the navel oranges.
  • The flavor deepens over time. For the best results, let the oranges marinate for a full 24 hours before serving.
  • To easily de-seed a pomegranate, cut it in half and hold it cut-side down over a bowl. Firmly tap the back of the pomegranate with a wooden spoon, and the seeds will fall right out.

Method

  1. Prepare the Oranges: Using a sharp knife, carefully slice off the top and bottom of each orange. Stand an orange on one of its flat ends and slice downwards, following the curve of the fruit, to remove all the peel and bitter white pith.
  2. Once peeled, slice the oranges into thin, ¼-inch / 6mm rounds.
  3. Layer the Flavors: In a medium, attractive serving bowl, arrange a single layer of orange slices.
  4. Sprinkle with some of the sugar, a few cloves, and a piece of the cinnamon stick.
  5. Repeat this process, creating layers of oranges, sugar, and spices until all the orange slices are used.
  6. Add the Marinade: Gently and slowly pour the white wine over the layered oranges, trying not to disturb the sugar.
  7. Drizzle the brandy evenly over the top. The liquid should just about cover the fruit.
  8. Marinate to Perfection: Cover the bowl tightly with plastic wrap and transfer it to the refrigerator.
  9. Let the oranges marinate for at least 4 hours, or preferably overnight, to allow the flavors to meld beautifully.
  10. Serve and Garnish: Just before serving, remove the bowl from the refrigerator.
  11. Garnish generously with the fresh pomegranate seeds for a pop of color and texture.
