Wholesome Whole Wheat Pancakes with Crispy Edges

This recipe is my go-to for pancakes that are wonderfully light, packed with whole-grain goodness, and boast those irresistibly crispy, buttery edges. Paired with fresh fruit and a drizzle of warm maple syrup, it's a meal that feels indulgent yet nourishing.

Ingredients

  • 2½ cups (300g / 10.6 oz) whole wheat pastry flour (or 1¼ cups whole wheat flour and 1¼ cups all-purpose flour)
  • 1 tablespoon (15 ml / 0.5 fl oz) baking powder
  • 1 teaspoon (5 ml / 0.2 fl oz) salt
  • 2 large eggs, beaten
  • 2 cups (480ml) milk
  • 2 tablespoons (30ml / 1 fl oz) pure maple syrup
  • 6 tablespoons (85g / 3 oz) unsalted butter, melted and slightly cooled, plus more for the pan
  • Pure maple syrup and fresh fruit, for serving

  • For the crispiest edges, always use butter instead of oil to grease your pan.
  • To keep pancakes warm and prevent sogginess, place them in a single layer on a baking sheet in a 300°F (150°C) oven as you cook the rest of the batch.
  • Gently warm your maple syrup before serving so it doesn't cool down your hot pancakes.
  • This recipe can easily be halved if you're cooking for one or two people.

Method

  1. In a large bowl, whisk together the flour, baking powder, and salt. 2.
  2. In a separate medium bowl, beat the eggs with the milk and maple syrup until well combined.
  3. Pour the wet into the dry , add the 6 tablespoons (90 ml / 3 fl oz) of melted butter, and stir gently with a spatula just until the batter comes together. A few lumps are perfectly fine—do not overmix!
  4. Let the batter rest for 10 minutes. 3.
  5. Heat a large non-stick skillet or griddle over medium heat.
  6. Add a small pat of butter and swirl to coat the bottom. Test if the pan is ready by dropping a tiny bit of batter; it should sizzle immediately. 4.
  7. Pour about ¼ to ⅓ cup of batter onto the hot skillet for each pancake.
  8. Cook for 2-3 minutes, or until the surface is covered with bubbles and the edges look set.
  9. Flip carefully and cook for another 1-2 minutes until golden brown. 5.
  10. Repeat with the remaining batter, adding more butter to the pan as needed.
  11. Serve warm stacks immediately with a generous drizzle of maple syrup and a side of fresh fruit.
