Ingredients

  • 4 cups (960 ml) broccoli florets, halved if large
  • 1¼ cups prepared creamy portobello mushroom soup
  • ¾ cup light mayonnaise or soy mayonnaise
  • 1 tsp (5 ml) dry sherry or cooking sherry
  • ¼ tsp poultry seasoning (or ⅛ tsp each ground thyme and ground sage)
  • 1 lb (454 g) seitan, cut into bite-sized pieces
  • ½ cup freshly grated Parmesan cheese or shredded vegan cheese, optional
  • ⅔ sheet frozen puff pastry, thawed
  • For a richer flavor, briefly pan-sear the seitan pieces in a little olive oil until lightly browned before adding them to the sauce.
  • To make ahead, prepare the filling (step 3) and store it in the baking dish, covered, in the refrigerator for up to 24 hours. Simply top with the puff pastry squares just before baking.
  • For an extra savory kick, add a pinch of nutmeg or a tablespoon of nutritional yeast to the mushroom sauce when you mix it.

Method

  1. Prepare your oven and dish.
  2. Preheat the oven to 425°F (220°C) and place an oven rack in the bottom third. Lightly coat a 13- × 9-inch baking dish with cooking spray.
  3. Steam the broccoli.
  4. Place the broccoli florets and 3 tablespoons (45 ml / 1.5 fl oz) of water in a microwave-safe dish with a lid. Microwave on high for 2 minutes, stir, and microwave for another 2 minutes, or until tender.
  5. Drain well.
  6. Mix the creamy filling.
  7. In a large bowl, whisk together the portobello soup, mayonnaise, sherry, and poultry seasoning.
  8. Season with salt and pepper to taste. Gently fold in the cooked broccoli and seitan pieces until everything is well-coated.
  9. Assemble the casserole.
  10. Pour the seitan and broccoli mixture into your prepared baking dish. If using, sprinkle the Parmesan or vegan cheese evenly over the top.
  11. Top with puff pastry.
  12. Cut the thawed puff pastry sheet into 6 equal squares and arrange them over the filling. It's okay if they don't cover the entire surface.
  13. Bake to perfection.
  14. Bake for 20 minutes, or until the pastry is beautifully puffed and golden brown, and the filling is hot and bubbling.
  15. Let it rest for a few minutes before serving.
  16. Don't be afraid to swap your veggies! This dish is also delicious with steamed asparagus, green beans, or even cauliflower florets.
