Ingredients

  • 1 large navel orange, about 250g (8.8 oz)
  • 1½ cups / 360g (12.7 oz) plain whole milk yogurt
  • ½ tsp (1.5 g / 0.05 oz) ground cumin
  • ¼ tsp (1.5 g / 0.05 oz) salt, or to taste
  • Use full-fat, plain yogurt for the richest, creamiest texture that holds up well against the citrus.
  • For a more intense, aromatic flavor, toast whole cumin seeds in a dry skillet until fragrant, then freshly grind them before adding to the yogurt.

Method

  1. Zest and Prep the Orange: Thoroughly wash and dry the orange. Finely grate the peel from one half of the orange.
  2. Place half of this zest into a medium-sized mixing bowl and reserve the other half for a vibrant garnish. 2. Segment the Fruit: Using a small, sharp knife, carefully slice away all the remaining peel and white pith from the orange.
  3. Working over your mixing bowl to catch any juices, hold the orange and cut between the membranes to release each fruit segment.
  4. Cut the larger segments in half. 3.
  5. Combine the Raita: Add half of the orange segments to the bowl with the zest and gently mash them with a fork to release their juice.
  6. Stir in the remaining orange segments, the plain yogurt, ground cumin, and salt until just combined. 4.
  7. Chill and Serve: Transfer the raita to a serving dish.
  8. Garnish with the reserved orange zest. For the best flavor, cover and chill in the refrigerator for at least 1 hour, but no more than 2, before serving.
  9. Add a handful of finely chopped fresh mint leaves for an extra layer of cool, refreshing flavor.
