Ingredients

  • 1 cup (185 g / 6.5 oz) bulgur wheat
  • 1 large egg, beaten
  • 1 tablespoon (14 g / 0.49 oz) butter (or vegan butter)
  • ⅓ cup (30 g / 1.06 oz) fine egg noodles or broken spaghetti strands
  • 1 medium carrot, grated
  • 1 medium onion, minced
  • 2 cups (475 ml) strong-flavored vegetable stock
  • ½ teaspoon salt, or to taste
  • & Variations
  • Boost Your Broth: For the richest flavor, use a strong vegetable stock. If using a commercial base or powder, don't be afraid to use a little extra to make the flavor more concentrated.
  • Hands Off for Fluffy Grains: The most important rule for fluffy pilaf is not to stir it while it simmers! Stirring releases starches and will result in a gummy, mushy texture.
  • Go Nuts: For a delicious twist, swap the noodles for ⅓ cup of slivered almonds. Toast them with the onion and carrot for extra crunch and flavor.
  • Perfect Reheating: To reheat, add a tablespoon of water to the pilaf in a pan over low heat, fluffing occasionally with a fork. Alternatively, place it in a buttered baking dish with a tablespoon of water and heat in a 350°F / 175°C oven for about 20 minutes.
  • Make It Vegan: To make this recipe vegan, simply omit the egg and use a vegan butter substitute. The pilaf will still be delicious, though slightly less fluffy.

Method

  1. Coat the Bulgur: In a medium saucepan, combine the dry bulgur and the beaten egg. Use a fork to toss everything together until each grain is well-coated.
  2. Toast the Grains: Place the saucepan over medium heat.
  3. Stir continuously with a wooden spoon or spatula until the egg has dried and the bulgur grains are separate and smell toasty, about 3-4 minutes.
  4. Sauté the Aromatics: Make a well in the center of the toasted bulgur and add the butter.
  5. Once it's melted and sizzling, add the noodles, grated carrot, and minced onion.
  6. Sauté for 2 minutes, stirring constantly to toast the noodles and soften the vegetables without burning.
  7. Simmer to Perfection: Pour in the vegetable stock and add the salt.
  8. Stir once, cover the pan, and bring to a rolling boil. Immediately reduce the heat to the lowest possible simmer.
  9. Cook for 20 minutes, or until all the liquid is absorbed. It's crucial not to stir during this process to prevent the bulgur from becoming mushy.
  10. Rest and Fluff: Once the liquid is absorbed, remove the pan from the heat.
  11. Let it stand, still covered, for 5 minutes. Uncover and gently fluff the pilaf with a fork to separate the grains.
  12. Serve immediately and enjoy!
