Ingredients

  • 8 tablespoons (113 g / 4 oz) unsalted butter, softened, plus more for the pan
  • 1 1/2 cups (180 g / 6.3 oz) all-purpose flour
  • 1/2 cup (60 g / 2.12 oz) whole wheat flour
  • 1 teaspoon (6 g / 0.21 oz) salt
  • 1 1/2 teaspoons (6 g / 0.21 oz) baking powder
  • 3/4 cup (150 g / 5.3 oz) granulated sugar
  • 2 large eggs, at room temperature
  • 3 very ripe large bananas, mashed until smooth
  • 1 teaspoon (5 ml / 0.2 fl oz) vanilla extract
  • 1/2 cup (60 g / 2.12 oz) chopped walnuts or pecans
  • 1/2 cup (45 g / 1.59 oz) shredded, unsweetened coconut
  • for Perfect Banana Bread
  • Use the ripest bananas you can find. Brown, spotty, and even fully black bananas are ideal, as they provide the most sweetness and moisture.
  • Feel free to customize your mix-ins! Swap the walnuts for 1/2 cup (480 ml) of chocolate chips, omit the coconut, or add 1/2 cup (480 ml) of raisins or other dried fruit.
  • For a crunchy, bakery-style top, sprinkle the batter with a tablespoon of turbinado or demerara sugar before baking.

Method

  1. Preheat your oven to 350°F / 175°C. Generously grease a 9x5-inch loaf pan with butter.
  2. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, salt, and baking powder.
  3. Set aside.
  4. In a separate large bowl, use a hand mixer or stand mixer to cream the softened butter and sugar together until light and fluffy.
  5. Beat in the eggs one at a time, followed by the mashed bananas and vanilla extract.
  6. Add the dry to the wet and mix on low speed (or stir by hand) just until combined. Be careful not to overmix; a few lumps in the batter are perfectly fine.
  7. Gently fold in the chopped nuts and shredded coconut with a spatula.
  8. Pour the batter into your prepared loaf pan and spread it evenly.
  9. Bake for 45 to 60 minutes. To check for doneness, insert a toothpick into the center. It should come out with a few moist crumbs attached, but not wet batter. This bread is very moist, so avoid overbaking.
  10. Let the banana bread cool in the pan on a wire rack for 15 minutes before carefully removing it to cool completely.
  11. Do not overmix the batter once you combine the wet and dry . Overmixing develops gluten, which can result in a tough, dense loaf instead of a tender one.
