Ingredients

  • For the Rice Cakes
  • 1 lb (450 g) sliced Korean rice cakes (tteok), fresh or frozen
  • 2 tbsp (30 ml) neutral oil, like grapeseed or corn
  • Freshly ground black pepper, to taste
For the Sauce
  • 3 tbsp (45 ml) soy sauce
  • 1 tbsp (15 ml) dark sesame oil
  • 1 tbsp (15 g / 0.53 oz) sugar
  • 3 tbsp (45 ml) Korean chile paste (gochujang), or to taste
  • For Garnish
  • 1 scallion, thinly sliced
  • 1 tsp (5 ml) toasted sesame seeds
  • Pro-Tips for Perfect Rice Cakes
  • For the most authentic flavor and a beautiful glossy red sauce, use Korean gochujang instead of other chile pastes.
  • Feel free to make it a one-pan meal! Add thinly sliced shiitake mushrooms, onions, or bell peppers to the hot oil and sauté for a few minutes before adding the rice cakes.
  • The reserved starchy cooking water is key. It helps the sauce emulsify and cling to the rice cakes for that perfect saucy consistency.

Method

  1. Prepare the Rice Cakes: If using frozen rice cakes, soak them in cold water for 10-15 minutes to thaw.
  2. Bring a pot of water to a boil, add the rice cakes, and cook until soft and chewy, about 3-5 minutes.
  3. Drain, making sure to reserve about 1/2 cup (480 ml) of the starchy cooking water.
  4. Mix the Sauce: In a small bowl, whisk together the soy sauce, dark sesame oil, sugar, and chile paste until the sugar is dissolved.
  5. Set aside.
  6. Sauté and Combine: Heat the neutral oil in a large nonstick or cast-iron skillet over medium-high heat.
  7. Once shimmering, carefully add the drained rice cakes and a sprinkle of black pepper.
  8. Stir-fry for 1 minute until they begin to get a little color.
  9. Finish the Dish: Pour the prepared sauce over the rice cakes.
  10. Cook, stirring constantly, for 2-3 minutes until the sauce thickens and coats every cake beautifully. If the sauce gets too thick or the pan looks dry, add a tablespoon or two of the reserved cooking water to create a glossy finish.
  11. Serve: Immediately transfer the rice cakes to a serving dish.
  12. Garnish generously with sliced scallions and toasted sesame seeds.
  13. Enjoy while hot!
  14. Don't overcrowd the pan. Use a large skillet to ensure the rice cakes get a chance to toast slightly rather than just steam, which enhances their texture.
