Ingredients

  • 2 cups (300 g / 10.6 oz) firm but ripe papaya, cut into 1/2-inch chunks
  • 1/2 cup (75 g / 2.65 oz) diced red onion
  • 1/2 cup (75 g / 2.65 oz) diced red, yellow, or green bell pepper
  • 2 tablespoons (30 ml / 1 fl oz) minced fresh chile, like jalapeño, to taste
  • 1/4 cup (10 g / 0.35 oz) chopped fresh cilantro leaves
  • 1 tablespoon (15 ml / 0.5 fl oz) extra virgin olive oil
  • 3 tablespoons (45 ml / 1.5 fl oz) freshly squeezed lime juice, plus more to taste
  • Salt and freshly ground black pepper to taste
  • Balance is Key: Constantly taste as you mix. The sweetness of fruit varies, so you may need more lime juice for acidity or more chile for heat to achieve the perfect balance.
  • Uniform Dicing: For the best texture and flavor in every bite, try to chop your papaya, onion, and bell pepper into similar-sized pieces.
  • Get Creative with Fruit: Don't be afraid to swap the papaya! This recipe works beautifully with mango, pineapple, or even peaches. See the variations in the post for more inspiration.

Method

  1. In a medium bowl, combine the papaya, red onion, bell pepper, minced chile, cilantro, olive oil, and lime juice.
  2. Stir gently until all the are well mixed.
  3. Let the salsa sit for at least 5-10 minutes to allow the flavors to meld together.
  4. Taste the salsa and adjust the seasoning as needed.
  5. Add more lime juice for tartness, more chile for heat, or more salt to enhance all the flavors.
  6. Serve immediately for the freshest taste, or refrigerate for up to two hours. If refrigerated, allow it to return to room temperature for about 15 minutes before serving.
  7. Don't Skip the Rest: Letting the salsa sit for at least 10 minutes before serving is crucial. This marinating time allows the individual flavors to meld into one cohesive, delicious taste.
