Ingredients

  • 1 pound (450 g / 15.9 oz) dried red beans, washed, picked over, and soaked if desired
  • 1/2 teaspoon (10 ml / 0.3 fl oz) cayenne pepper, or to taste
  • 2 tablespoons (30 ml / 1 fl oz) neutral oil, like grapeseed or corn
  • 1 tablespoon (15 ml / 0.5 fl oz) fresh ginger, peeled and minced
  • 1 tablespoon (15 ml / 0.5 fl oz) garlic, minced
  • 1 teaspoon (5 ml / 0.2 fl oz) fennel seeds
  • 1 teaspoon (5 ml / 0.2 fl oz) ground cinnamon
  • 1 pinch ground cloves
  • 1 tablespoon (15 ml / 0.5 fl oz) ground cardamom
  • 1 bay leaf
  • 1 teaspoon (5 ml / 0.2 fl oz) ground turmeric
  • 2 cups (480 g / 16.9 oz) chopped tomatoes, canned or fresh
  • Salt, to taste
  • 1 tablespoon (15 ml / 0.5 fl oz) garam masala or curry powder
  • For a 20-minute meal, use 4 cups (960 ml) of canned or home-cooked red beans. Simply drain, rinse, and add them in Step 4.
  • This curry freezes beautifully. Cool completely, then store in an airtight container in the freezer for up to 3 months.
  • For a richer, creamier finish, stir in 1/4 cup (960 ml) of full-fat coconut milk or a dollop of coconut cream during the last 5 minutes of cooking.
  • Swap the red beans for an equal amount of chickpeas or black beans for a different but equally delicious curry.

Method

  1. Cook the Beans: Place the washed red beans in a large pot and cover with water by at least 2 inches.
  2. Add the cayenne pepper.
  3. Bring to a boil, then reduce the heat to a simmer and cook until the beans are almost tender, about 1 to 2 hours. 2.
  4. Sauté the Aromatics: While the beans cook, heat the oil in a deep skillet or large pot over medium heat.
  5. Once hot, add the minced ginger, garlic, fennel seeds, cinnamon, cloves, cardamom, bay leaf, and turmeric.
  6. Cook, stirring constantly, for about 1 minute until fragrant. 3. Create the Tomato Base: Add the chopped tomatoes to the skillet with the spices.
  7. Cook, stirring occasionally, for about 5-7 minutes, until the tomatoes soften and break down into a sauce. 4.
  8. Combine and Simmer: Drain the cooked beans, reserving about 1 cup (240 ml) of the cooking liquid.
  9. Add the drained beans to the tomato sauce along with a generous pinch of salt.
  10. Stir to combine. 5.
  11. Finish the Curry: Continue to cook over medium-low heat for another 15-20 minutes, or until the beans are fully tender and have absorbed the flavors of the sauce. If the curry becomes too thick, add a splash of the reserved bean cooking liquid. 6.
  12. Season and Serve: Stir in the garam masala.
  13. Taste the curry and adjust the salt and cayenne as needed.
  14. Remove the bay leaf before serving hot with rice or naan.
