Ingredients

  • For the Strawberry Yogurt Sauce
  • 4 large strawberries, hulled
  • 2 tablespoons (30 ml / 1 fl oz) honey
  • Juice of 1 lime
  • 1 ½ cups / 360g (12.7 oz) plain low-fat yogurt
  • For the Fruit Salad
  • 4-5 cups / approx 800g (28.2 oz) of mixed fresh fruit, such as
  • Blueberries
  • Strawberries
  • Diced melon
  • Diced mango
  • Sliced banana
  • Diced papaya
  • Orange sections
  • Sliced kiwi
  • Finely diced apple
  • Pineapple chunks
  • Diced pears
  • For Garnish
  • Fresh mint sprigs
  • To make this recipe vegan, simply swap the honey for maple syrup and use your favorite plant-based yogurt, such as coconut or almond.
  • The strawberry yogurt sauce can be made up to 2 days in advance. The flavors will deepen and become even more delicious as it chills.
  • To prevent fruits like apples, pears, and bananas from browning, toss them with a little bit of extra lime or lemon juice right after slicing.
  • For a bit of crunch, sprinkle some toasted granola, chopped nuts, or shredded coconut over the top just before serving.

Method

  1. Prepare the Sauce: In a small bowl, use a fork to mash the hulled strawberries with the honey and lime juice until a rough paste forms. Gently fold in the plain yogurt until just combined.
  2. Cover the bowl and chill in the refrigerator for at least 2 hours to allow the flavors to meld.
  3. Assemble and Serve: When you're ready to serve, prepare your selection of fresh fruit. You can either divide the fruit among 6 individual serving bowls and top with a generous dollop of the chilled strawberry yogurt sauce, or arrange the fruit on a large platter and serve the sauce on the side.
  4. Garnish with fresh mint sprigs for a pop of color and aroma.
