Ingredients

  • 1 tablespoon (15 mL / 0.5 fl oz) coconut or olive oil
  • 2 teaspoons (10 mL / 0.3 fl oz) toasted sesame oil
  • 1/2 onion, diced
  • 3 large cloves garlic, minced
  • 2 tablespoons (30 mL / 1 fl oz) minced ginger
  • 6 cups (1440 ml) (1.5 L) cooked adzuki beans
  • 2 cups (500 mL) water
  • 2 tablespoons (30 mL / 1 fl oz) tamari or soy sauce
  • 1/2 teaspoon (2 mL / 0.1 fl oz) salt
  • 2 tablespoons (30 mL / 1 fl oz) lemon juice
  • For a quicker meal, use canned adzuki beans. Just be sure to rinse them thoroughly to remove excess sodium before adding them to the pot.
  • Elevate the flavor by adding a pinch of red pepper flakes with the garlic and ginger for a gentle heat, or stir in a handful of fresh cilantro at the end.
  • This dish stores beautifully in an airtight container in the refrigerator for up to 4 days. The flavors deepen overnight, making it a fantastic meal prep option.
  • To make this a heartier, more complete meal, serve it over fluffy quinoa, brown rice, or with a side of steamed greens like kale or bok choy.

Method

  1. In a large pot, heat the coconut and sesame oils over medium heat.
  2. Add the diced onion and cook for 3 to 5 minutes, or until it becomes translucent.
  3. Stir in the minced garlic and ginger and cook for another minute until fragrant.
  4. Add the cooked adzuki beans, water, tamari, and salt to the pot.
  5. Reduce the heat to low, cover, and let it simmer for 10 minutes to allow the flavors to meld.
  6. Remove from heat and stir in the fresh lemon juice just before serving.
