Ingredients

  • 2 lbs (900 g) (31.7 oz) fresh, ripe strawberries
  • 2 cups (480 ml) cold water
  • ⅓ cup (80 ml) (2.7 fl oz) honey, or to taste
  • 2 Tbs / 30ml (1 fl oz) fresh lemon juice
  • 10 to 12 ice cubes, for serving
  • For a vegan version, simply swap the honey for an equal amount of agave nectar or maple syrup. Adjust to your preferred sweetness.
  • Infuse more flavor by adding a handful of fresh mint leaves or a few slices of lime to the pitcher while it chills.
  • Create a sparkling version by filling glasses halfway with the chilled strawberry base and topping it off with club soda or sparkling water.
  • This agua fresca is best enjoyed within 2 days. Store it in a sealed container in the refrigerator and stir well before serving as natural separation may occur.

Method

  1. Prep & Blend: Wash and hull the strawberries.
  2. Place them in a blender with the cold water and blend until completely smooth. You may need to do this in two batches depending on your blender's size. 2.
  3. Strain for Smoothness: Pour the purée through a fine-mesh sieve into a large pitcher, using a spatula to press out all the liquid.
  4. Discard the seeds and pulp left behind. 3. Flavor & Dissolve: Stir in the honey and fresh lemon juice.
  5. Continue stirring until the honey is completely dissolved into the mixture. 4.
  6. Chill & Serve: Refrigerate for at least 30 minutes until thoroughly chilled. To serve, fill glasses with ice, pour the agua fresca over top, and enjoy immediately.
