Ingredients

  • 12 slices French bread, about 1/2 inch or 1.25 cm thick
  • 1/2 cup or 120 g (4.2 oz) Pesto, homemade or store-bought
  • For picnics, pack the toasted bread and pesto separately. Assemble just before serving to prevent sogginess.
  • Elevate your crostini with toppings like a halved cherry tomato, a sprinkle of vegan Parmesan, or a drizzle of balsamic glaze.
  • Use a day-old baguette for the crispiest toasts that hold up well to the pesto spread without becoming soft.
  • Toast the bread slices up to a day in advance and store them in an airtight container at room temperature. Just add the pesto right before serving.

Method

  1. Preheat your broiler.
  2. Arrange the French bread slices in a single layer on a baking sheet.
  3. Broil for 1-2 minutes per side, watching carefully, until each slice is lightly golden and crisp on both sides.
  4. Remove the toasts from the oven and immediately spread about 2 teaspoons (10 ml / 0.3 fl oz) of pesto evenly over each warm slice.
  5. Serve within 20 minutes for the best texture.
